The short answer
At the till, tap Assign Customer and find your regular by name, email or phone, and Details shows their orders, what they've spent and anything they owe. Tap Add to Order, and their name follows the order to payment, their total updates when they pay, and their lifetime value shows under Customer in the back office.

Step by step
Everything said in the video, chapter by chapter. Each time opens the video at that moment on YouTube.
0:00In this video you'll add a regular to their order at the till, and see everything they've spent with you.
Start the order
0:09Start the order as normal. Here's a takeaway. Add what they're having.
Find your regular
0:21Now tap Assign Customer. This is your customer list. Search by name, email or phone number. Oliver's a regular. At a glance you can see how many orders he's placed, what he's spent, and anything he owes.
Their history
0:46Tap Details to see more. Here are his contact details, his total orders, any outstanding balance, store credit, and his last visit. Total spent is what he's actually paid you. Below is every order, with the date, who served him, the total and whether it's paid.
1:06The other tabs track money he owes and changes to his account.
Watch the total grow
1:38Start a new sale. It begins without a customer, so nobody else's order lands on Oliver. Look him up again. He's on three orders now. His total and last visit updated the moment he paid, and today's order is at the top.
In the back office
2:01In the back office, open Customer. This card adds up the lifetime value of all your customers. Open Oliver, and his lifetime value matches what he's spent at the till.
Recap
2:19To recap. Tap Assign Customer, and find them by name, email or phone. Details shows their history. Their name follows the order to payment, and their total updates when they pay.
